Dal Makhani

Ingredients
Whole Urad dal -- 1 cup
Rajma – 1 tbsp
Water – 4 cups
Chopped Onion – 1
Chopped Tomato – 1
Finely Scliced Ginger – 1 tsp
Chopped Garlic – 4 – 5
Green Chillies – 4 (slit for garnishing)
Butter or Ghee – 2 - 3 tbsp
Cumin seeds – 1 tsp
Red Chilli Powder – 1/2 tsp
Turmeric Powder – 1/2 tsp
Fresh Cream – 1/2 cup
Salt to taste

Method
Soak urad dal and rajma overnight (at least 10 hours). Cook dal in a pressure cooker until it becomes tender by adding a little salt and chopped ginger. Mash the dal with a spoon. Add water water if required and simmer it for 10-15 minutes in cooker without lid. Add fresh cream and mix well. Heat the ghee in a pan and fry cumin seeds. Add onions and garlic and fry till golden brown in colour. Add tomatoes, red chilli powder and turmeric powder and fry till the ghee separates. Add cooked dal and salt if required. Cook for few minutes till you get a creamy consistency. Garnish with green chillies and serve hot with parathas, rotis or rice.
