Masala Aloo

Masala Aloo

Potatoes – 5 (medium size)
Cumin seeds – 1 tsp
Oil – 2 tbsp
Coriander powder -- 2tsp
Red Chilli powder – 1/2 tsp
Chopped coriander leaves for garnish
Mango powder – 1/2 tsp
Salt to taste
Boil potatoes, let them cool then peel them. Cut potatoes into medium size pieces. Heat oil in a pan. Add cumin seeds and let them crackle. Now add corainder powder. Immediately add potatoes, salt, red chilli powder and mango powder. Mix well and saute for 2 minutes. Sprinkle little water if required and cook on low heat for 4-5 minutes. Remove from the heat and garnish with chopped coriander leaves. Serve hot with paratha or puris.

Potatoes are very low in saturated fat, cholesterol and sodium. It is also a good source of Vitamin C, Vitamin B6, Potassium and Manganese.
