Aloo Tamatar ki Sabji recipe – Boiled potatoes in thin, spicy tomato gravy. Potato Tomato curry is an easy, simple, and popular North Indian curry. This Aloo Tamatar ki sabji is regularly cooked in North Indian households.

Aloo Tamatar Curry is made by cooking potatoes in tomato gravy. Tomatoes add a tangy taste to the dish. This dish is very flavorful and delicious. Moreover, potato is such a vegetable that most of the people like it.

In this recipe, I have added some extra water to make the gravy extra thin. However, you can make this curry of the desired consistency as per your preference.

Ingredients

Potatoes – 3 - 4 (medium sized)
Finely chopped tomatoes – 3/4 cup
Cumin seeds – 1/2 teaspoon
Ginger & garlic paste – 1 teaspoon
Turmeric powder – 1/2 teaspoon
Red chili powder – 1 teaspoon
Coriander powder – 1 teaspoon
Oil or Ghee – 1 tablespoon
Chopped coriander leaves – 1 tablespoon
Salt to taste

Method

Wash the potatoes. Boil them in a pressure cooker. Keep potatoes aside and let them cool. Now break and roughly mash the boiled potatoes in small pieces by hands.

Heat oil or ghee in a pressure cooker. Add cumin seeds and let them crackle. As cumin seeds crack, add finely chopped tomatoes and ginger and garlic paste. Cook until tomatoes are soft and mushy.

Now add turmeric powder, red chili powder, salt, and coriander powder. Mix well and cook until tomatoes start separating from the oil. It takes about 2 minutes only and you can see the oil leaving the sides.

Add potatoes and mix them well with spices. Add 2 cup of water and bring to boil. As potatoes come to boil cover the pressure cooker and cook for two whistles. Turn off the heat and allow the steam to escape before opening the lid. Adjust the consistency of the gravy to your liking. Garnish with chopped coriander leaves. Serve hot with puris, rotis, parathas or chapatis. You can also this curry dish with steamed rice.
