Aloo matar dry is a popular dry vegetable recipe with
a fusion of potato and green peas. Aloo matar dry vegetable

by trains in India. Aloo matar dry vegetable can be served with puris, rotis or parathas.
Aloo Matatar Dry recipe | Potato Green Peas Dry recipe | How to prepare Sookha Aloo Matar?
Ingredients
Potatoes – 4 (medium)
Fresh or Frozen Green Peas – 1/2 cup
Oil – 1 tbsp
Chopped Onion – 1 (medium)
Tomato puree – 3 tbsp
Cumin seeds – 1/2 tsp
Turmeric powder – 1/2 tsp
Red Chilli powder – 1 tsp
Mango powder – ¼ tsp
Chaat Masala powder – ¼ tsp
Garam Masala powder – 1/2 tsp
Salt to taste
Method
Wash both the potatoes. Peel and dice the potatoes into small pieces. Heat
oil in a pan. Add cumin seeds and let them crackle. Add chopped onions and
saute till they become translucent. Add tomatoes puree and saute for 4-5
minutes. Add potatoes and green peas. Mix well and sauté for 7-8 minutes. Add
turmeric powder, red chili powder, and
salt. Mix well. Add 1/2 cup of water. Cover and simmer until potatoes and green peas are well cooked. Do check in between
and if the water dries up then add some more water if required. Once vegetables
are cooked then add garam masala and mango powder. Mix well. Stir the sabji till all the liquid evaporates. Add chaat
masala powder and mix well. Serve hot with puris, rotis, parathas or as a side dish with Karhi chawal.
