Carrot & Cucumber Kimchi
salad is a crunchy, sweet and spicy dish. It is light, refreshing, quick and
easy to make. You can also use cabbage, green onions, radish along with these
vegetables. Just remember to add the other ingredients proportionately. Kimchi
salad can be served a side dish recipe or along with fried rice or noodles.

Ingredients
Cucumber – 200 gms
Carrots – 200 gms
White Vinegar – 2 tbsp
Chilli powder – 1 tsp
Powdered Sugar – 2 tsp (or
to taste)
Sesame Seeds – ½ tsp
Salt to taste
Method
Wash carrots and cucumber.
Peel carrots and cut into juliennes. Peel the cucumber
and cut into thin strips. Add carrots and cucumber in a large bowl. Add
vinegar, powdered sugar, roasted sesame seeds, chili
powder, and salt and mix it well. Refrigerate until chilled, at least an hour
before serving. Serve Kimchi salad as a side dish or along with fried rice or
noodles. Serve it chilled to enjoy.
