Shahi Tukda is also called
Shahi Toast or Royal Toast. Shahi Tukda is a yummy dessert made with deep fried
bread soaked in sugar syrup. Shahi Tukda recipe is easy to make dessert delicacy.
It is one of the favorite dishes of children. You can keep Shahi Tukda for
several days.

Ingredients
Bread -- 4 slices
Pistachios – 8
Ghee to deep fry
For Rabri (Thickened milk)
Milk – 2 cups
For Sugar Syrup
Sugar -- 1 cup
Water -- 1 cup
Few Saffron threads
Green cardamom powder – a pinch
Method
Cut the brown edges of the bread pieces and cut each
bread slice diagonally twice to get four triangular pieces. Chop the pistachios
finely.
Boil the milk in a pan. Reduce the heat to medium-low and keep the milk stirring. Evaporate
the milk and reduce it to half to get the thick milk like rabri. It will take about 15 minutes. Turn off
the heat and keep the thickened milk aside.
In another pot, bring sugar and water to boil to make
sugar syrup. Reduce the heat. Keep stirring and let the sugar syrup boil for 7-6
minutes. The syrup should be of one string consistency for this delicacy. Add green
cardamom powder and saffron threads. Mix well and remove from the heat.
Heat ghee in a pan and fry the bread slices on medium
heat till the bread turns golden brown. Fry the bread from both the sides till
golden brown. Drain out the excess ghee. Keep aside and let toast cool down.
Dip the toasts in the prepared sugar syrup. Remove
them into a bowl. Sprinkle rabri and
chopped pistachios in the bowl. Toss Shahi Tukra in the bowl. Arrange tukda in a serving dish and serve.
