Ingredients
Tinda (Round Gourd or Apple Gourd) – 250 gms
Sliced Onion – 1 (medium size)
Chopped Tomatoes – 2 (medium size)
Garlic – 3-4 cloves (minced)
Oil – 2 tbsp
Cumin seeds – 1/2 tsp
Red Chilli powder – 1 tsp
Coriander powder -- 2 tsp
Turmeric powder – 1/2 tsp
Mango powder – 1 tsp
Salt to taste
Method
Wash and wipe tindas with the help
of a kitchen cloth. Cut the tindas into
wedges of medium thickness. Heat oil in a kadai.
Add cumin seeds, let them crackle and change their colour. Add chopped onions and minced garlic. Saute until light brown in colour. Add tomatoes and saute for 4-5 minutes. Add tinda wedges. Sprinkle turmeric powder, red chili powder, and coriander powder. Mix well
and cook covered on low heat stirring in between. When tinda is cooked, add mango powder and salt. Mix well and cook for
2-3 minutes on high heat. Serve tinda masala
along with Dal, Raita, and Chapatis.
