Besan suji cheela
stuffed with soya paneer bhurji is a
tasty and nutritious dish for Indian breakfast. It can also be eaten as an
appetizer in parties, an evening snack with a cup of tea or even as a school
lunch box. This cheela is filled with
soya paneer bhurji making it a healthy
meal/snack for all age groups.

Ingredients
Besan (gram flour) – 1 cup
Suji (Semolina) – 1/2 cup
Grated Paneer (cottage cheese) – 1/4 cup
Soya granules – 1/4 cup
Chopped onions -- 2 tbsp
Chopped coriander leaves – 1 tbsp
Chopped green chilies
– 1 tsp
Red Chilli powder – 1/2 tsp
Ajwain (carom seeds) – 1/4 tsp
Oil for frying
Salt to taste
Method
Add soya granules in warm water. Squeeze excess water and keep aside. Heat one tablespoon oil in a pan. Add chopped onions and
saute till translucent. Add soya granules
and cook for two minutes. Add grated paneer, green chilies and salt. Mix well
and cook for another two minutes. Add chopped coriander leaves and keep aside.
In a bowl mix together besan, suji, red chili
powder, salt, and ajwain. Add water to
make a batter of pouring consistency.
Heat a nonstick tawa. Drizzle few drops of oil to make the tawa greasy. Pour a ladle full of batter on tawa and spread it evenly using back of the ladle. Cook the cheela on
both sides using little oil till it gets crispy.
Place a portion of the filling along center
diameter of the cheela and fold it lengthwise as shown in photos. Serve hot with
green coriander chutney or tomato sauce.
