Poha
(Pressed rice) ----1 cup
Oil------1-2
tbsp
Peanuts----1tbsp
Mustard
Seeds---1/4 tsp
Turmeric
powder—1/4 tsp
Curry
Leaves---6-7
Chopped
Onions----1/4 cup
Chopped
Green Chillies—1-2
Chopped
Coriander---1 tsp
Boiled
Peas--- 2 tbsp (optional)
Carrot
cubes (Boiled) --- 2 tbsp (optional)
Lemon
Juice---1 tsp
Salt
to taste
Method
Pick the poha. Rinse the poha
in clean running water in a strainer, not letting it soak too long in the water
else it gets mushy. Heat oil in a pan. Add peanuts and fry till they are golden
brown in colour and keep them aside. Then
add mustard seeds and let them pop. Add the onions. saute the onions until they become soft. Now add the curry
leaves, green chilies, boiled peas and
roasted peanuts and saute for a minute. Add the turmeric powder and saute over
low heat. Add salt and poha and mix well.
Saute until mixed and heated well for 2-3
minutes. Mix in lemon juice and half of the coriander. Garnish with the rest of
the coriander and serve.
