Dal
Makhani is one of the most popular dal dishes originated from the Punjab region of India. Makhani is the Punjabi word for buttery. The literal translation of Dal Makhani is dal cooked with butter. Everyone loves dal makhani
as part of a north Indian meal. Dal Makhani is prepared with the combination of
whole urad dal and rajma. It has a smooth and velvety texture and served with butter naan, plain rice, jeera rice, paratha or roti. It is also called Maa ki Dal.

Ingredients
Whole
Urad dal -- 1 cup
Rajma
– 1 tbsp
Water
– 4 cups
Chopped
Onion – 1
Chopped
Tomato – 1
Finely
Scliced Ginger – 1 tsp
Chopped
Garlic – 4 – 5
Green
Coriander leaves for garnishing
Butter
or Ghee – 2 - 3 tbsp
Cumin
seeds – 1 tsp
Red
Chilli Powder – 1/2 tsp
Turmeric
Powder – 1/2 tsp
Fresh
Cream – 1/2 cup
Salt
to taste
Method
Soak
urad dal and rajma overnight (at least 10 hours). Cook dal in a pressure cooker
until it becomes tender by adding a little salt and chopped ginger. Mash the
dal with a spoon. Add water water if required and simmer it for 10-15 minutes
in cooker without lid. Add fresh cream and mix well. Heat the ghee in a pan and
fry cumin seeds. Add onions and garlic and fry till golden brown in colour. Add
tomatoes, red chilli powder and turmeric powder and fry till the ghee
separates. Add cooked dal and salt if required. Cook for few minutes till you
get a creamy consistency. Garnish with green coriander leaves and serve hot
with parathas, butter naan, rotis, jeera rice or plain
rice.
