Rajma is a delicious and popular dish in North India. Kidney beans are
known as “Rajma” in Indian language. Rajma
is loved by people of all age groups. Rajma is a delicious recipe made with
kidney beans cooked in thick spicy onion tomato based gravy. Rajma is typically
served with rice. Rajma
curry goes very well with plain rice, jeera rice, roti, naan or paratha. Rajma
tastes great when served with rice, raita, onion salad, and pickle. You can
also pack “Rajam-chawal” in your children’s lunch box.

Ingredients
Rajma (Kidney Beans) – 1 cup
Cumin Seeds – 1/2 tsp
Chopped Onions – 3/4 cup
Chopped Tomatoes – 3/4 cup
Ginger Paste – 1 tsp
Garlic Paste – 1 tsp
Turmeric Powder – 1/2 tsp
Red Chilli powder – 1/2 tsp
Dhania Powder – 1 tsp
Garam Masala – 1/2 tsp
Butter – 1 tbsp
Oil – 2 tbsp
Water – 4 cups
Salt to taste
Method
Wash rajma and soak in enough water overnight (at least 8-10
hours). Next day discard the soaking water and add rajma in a pressure cooker
with fresh water. Boil rajma with little salt for about 15-20 minutes. Now heat
oil in pan and add cumin seeds and let them browned. Add onions and saute till
they get golden brown colour. Add ginger and garlic paste and saute for few
seconds. Add chopped tomatoes and saute till they become soft. Add turmeric
powder, red chilli powder, dhania powder and garam masala powder
Cook till oil starts leaving the masala. Then add boiled rajma along with
water. Mix well and simmer for 5 minutes. Add butter. Add more salt and water
if required. Simmer for 5 -10 minutes till you get your desired consistency.
Serve rajma with parathas, naan or rice. Rajma tastes great when served with rice, raita, onion salad, and pickle. You can also pack “Rajam-chawal” in your children’s lunch box.
