Soya Bhurji

Ingredients
Soya Granules – 1 cup
Boiled Green Peas – 1/2 cup
Chopped Onions – 1/4 cup
Chopped Tomatoes – 1/2 cup
Turmeric powder – 1/2 tsp
Red Chilli powder – 1 tsp
Cumin seeds – 1/2 tsp
Coriander leaves for garnishing
Oil – 1 tbsp
Salt to taste

Method
Soak soya granules in water for 2-3 minutes. Drain and squeeze excess water out. Heat oil in a pan. Add cumin seeds and let them crackle. Add onions and saute till they become light brown in colour. Add tomatoes and cook them for 2-3 minutes. Add turmeric powder, red chilli powder and salt and cook for 2-3 minutes. Add green peas and soya granules. Mix well and cook for another 5-7 minutes. Your soya bhurji is ready. Garnish with chopped coriander leaves. Serve hot with paratha or roti.
