Lauki Raita or Ghiya Raita
is a North Indian side dish. It is very simple and easy to make. The main
ingredients used in this raita recipe are lauki/ghiya and curd. This is super cooling dish for the scorching summers as both lauki/ghiya
and curd are cooling to the body.

Ingredient
Lauki/Ghiya (Bottle Gourd) –
150 gms
Cumin powder - 1 teaspoon
Salt to taste
Red chili powder – ½ tsp
Curd – 1 cup
Water as required
Method
Peel and grate the lauki/ghiya
(bottle gourd). Now take grated lauki/ghiya and 1-1.5 cups of water in a pan. Then
boil the grated lauki/ghiya until it softens and cooked completely. Turn
off the heat, drain the excess water and let the lauki/ghiya cool. Alternatively, add the lauki/ghiya to a bowl of cold
water. Then strain and squeeze them. Now place a tawa/frying pan over medium heat and dry roast the cumin seeds for
3-4 minutes. Turn off the heat. Let the cumin seeds cool. Now grind the roasted
cumin seeds to make a fine powder. Now,
beat the curd into smooth consistency in a large bowl. Then add the cooked lauki/ghiya,
roasted cumin seeds powder, red chili
powder, and salt and mix well. Add some water to the curd, if required. Serve
immediately or refrigerate it for some time and serve later. Serve this appetizing
and delicious lauki/ghiya raita along with any meal. The Lauki
Raita makes a good accompaniment to be served along with Biryani’s or Parathas.

recipe made from grated lauki/ghiya. Lauki/Ghiya is a highly rich in many
minerals and vitamins. Lauki has lots of fiber. Lauki, when combined with curd,
has an amazing cooling effect on the body.
