Gajar Methi recipe is very popular in North India. It is a dry vegetable
and very easy to make. Methi, when combined with carrots, make it a healthy and
nutritious dish. It is less spicy and little sweet side vegetable dish. The dry mango powder gives a tangy flavor to
the dish.
Carrot with Fenugreek leaves is an everyday recipe in the winter season. This side dish is packed with the goodness of carrot and
fenugreek. Gajar Methi ki Sabji has the pleasing
bitterness of Methi leaves but
awesome in taste. Serve hot with plain paratha, roti or chapattis. It can also go
very well with dal and rice.

Ingredients
Carrots (Gajar) – 2 cups
(cubed)
Chopped Fenugreek leaves – 2 cup
Oil – 2 tbsp
Cumin seeds – 1/2 tsp
Chopped onion – 1/4 cup
Chopped Garlic – 1 tsp
Turmeric powder – 1/4 tsp
Red Chilli powder – 1/2 tsp
Coriander powder – 2 tsp
Mango powder – 1/2 tsp
Salt to taste
Method
Heat oil in a kadai
on medium heat. Add cumin seeds, when seeds crackle. Add onions and saute until
translucent. Add chopped garlic and saute for few seconds. Add chopped fenugreek
leaves and saute for a couple of minutes. Add turmeric powder, red chili powder, coriander powder, and salt and mix well. Add cubed carrots and
1/2 cup water and stir well. Cover and cook for 6-8 minutes until carrots are
tender. Remove the cover. Add mango powder and mix well. Cook for 2-4 minutes
till all the liquid evaporates. Gajar Methi ki Sabji is ready. Serve hot with plain
paratha, chapatis, roti or any type of bread.
You can also serve it with dal and rice.
