Bathua Raita recipe is a refreshing side dish. It is a healthy and delicious curd recipe. The main ingredients used in this recipe are bathua (Chenopodium Leaves) and curd. 

Bathua Raita recipe is very simple and easy to make. This raita recipe is a healthy and tasty preparation. You can get fresh bathua in the market during the winter season. You can serve it during winter along with roti, paratha, puri, rice or pulao.

Ingredients

Bathwa (Chenopodium Leaves) – 1 bunch (250 gms)
Curd – 2 Cups
Roasted Cumin powder – t tsp
Red Chilli powder – ½ tsp
Salt to taste
Water as required

Method

Remove the big stems from the bathua. Wash it thoroughly and keep it aside. Chop the bathua finely. Now take it in a pan and add 2 cups of water. Bring it to a boil. Boil until it softens and cooked completely. Turn off the heat, drain the excess water and let it cool. You can also add it to a bowl of cold water if required. Then strain and squeeze the bathua. Mash it coarsely.

Now place a tawa over medium heat and dry roast the cumin seeds. Let the cumin seeds cool. Now grind the roasted cumin seeds to make a fine powder.

Pour the curd in a bow. Beat the curd using a hand mixer into a smooth consistency. Add the mashed bathua, half the red chili powder, half the roasted cumin seeds powder, and salt. Mix well and add some water to the raita, if required. Now transfer it into a serving dish, garnish with the remaining red chilli powder and roasted cumin seed powder.

The raita is ready. Serve it immediately or refrigerate it for some time and serve later. Serve this healthy and delicious recipe along with any meal. It makes a good accompaniment to be served along with roti, paratha, puri, rice or pulao.
