Carrot Raita is a popular
side dish in North India. It is very quick and healthy raita to make. Carrot
raita goes perfect with biryani, pulao,
or as a side dish with parathas. The ingredients used in this raita recipe are carrots,
curd, and few spices. Carrots add lovely
pink colour to this raita recipe
along with little sweetness. You can add little lemon juice to balance the
sweetness if required.

Ingredient
Carrots (Gajar) – 150 gms
Fresh Curd – 1 cup
Chopped onions - 1 tbsp (optional)
Cumin powder - 1 teaspoon
Black salt as required
Garam masala powder – a pinch
Red chili powder – ½ tsp
Water as required
Method
Peel and cut carrots into small cubes. Now take carrot cubes and
1-1.5 cups of water in a pan. Then boil the carrots until it softens and cooked
completely. Turn off the heat, drain the excess water and let the carrots cool.
Alternatively, add the carrots to a bowl
of cold water. Then strain and squeeze them. Now place a tawa/frying pan over medium heat and dry roast
the cumin seeds for 3-4 minutes. Turn off the heat. Let the cumin seeds cool. Now
grind the roasted cumin seeds to make a fine
powder. Now, beat the curd into smooth consistency in a large bowl. Then add
the cooked carrots, chopped onions, roasted cumin seeds powder, red chili powder, garam masala powder, and salt and mix well. Add some
water to the curd, if required. Serve immediately or refrigerate it for some
time and serve later. The Carrot Raita goes well with biryani, pulao, roti-sabji, dal-rice or parathas.
