Gajar Matar ki sabji recipe is very popular in Northern parts of India. This fresh and easy to make sabji is commonly made during the winter season. Gajar Matar sabji is dry sauted carrot and peas. Carrot Green Peas recipe is full of flavour and colour. It is a little sweet and perfect side vegetable dish.

Gajar Matar Sabji is loved by all age group of people. Carrots, when combined with fresh green peas, make it a nutritious and healthy dish.  Serve hot with plain paratha, roti or chapattis.

Ingredients

Carrots (Gajar) – 2 cups (cubed)
Fresh Green Peas – 1/2 cup
Oil – 2 tbsp
Cumin seeds – 1/2 tsp
Chopped onion – 1/4 cup
Chopped Garlic – 1 tsp
Turmeric powder – 1/4 tsp
Tomato puree – 3 tbsp
Red Chilli powder – 1/2 tsp
Coriander powder – 2 tsp
Mango powder – ¼ tsp
Chaat Masala powder – ¼ tsp
Green Coriander leaves for garnishing
Salt to taste

Method

Heat oil in a pan on medium heat. Add cumin seeds and let them crackle. Add chopped onions and saute until translucent. Add chopped garlic and saute for few seconds. Add tomatoes puree and saute for 4-5 minutes. 

Add green peas and cubed carrots. Mix well and saute for a few minutes. Add turmeric powder, red chili powder, coriander powder, and salt and mix well. Add 1/2 cup of water and stir well. Cover and cook for 7-8 minutes until carrots and peas are tender. Add some more water if required. 

Remove the cover. Add mango powder and mix well. Cook for 2-3 minutes. Add garam masala and mix well. Stir the sabji till all the liquid evaporates. 

Gajar Matar ki Sabji is ready. Garnish with green coriander leaves. Serve hot with plain paratha, roti or chapattis.
