Bhindi recipe is very
simple and quick to make. Kurkuri means crisp in Hindi. Crispy Bhindi recipe is
a deep-fried snack using bhindi (Ladyfingers) with gram flour (besan) and some spices.
This okra fry is a simply delicious snack. It tastes best with a squeeze of lemon
and a pinch of chaat masala before serving. I am sure you will try to make this

Bhindi Kurkuri is one of the
best side dishes for your lunch/dinner you can make with bhindi. You can serve
it as a side dish with dal-rice, pulao, curd-rice, sambar-rice or even with plain paratha or chapatis. It can be served as an accompaniment to your evening tea/coffee.

Ingredients
Bhindi (ladyfingers) – 250
grams
Gram flour (besan) – 1/2 cup
Red chili powder – 1/2 teaspoon
Dry mango powder (Amchur
powder) – 1/2 teaspoon
Cumin powder – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Chaat masala – 1 teaspoon
Lemon juice – 2 teaspoons
(optional)
Oil to deep fry
Salt to taste
Water as required
Method
Wash the bhindi (ladyfingers)
thoroughly in water. Wipe them dry with a kitchen towel. Trim the edges. Split
the bhindi vertically with a sharp knife. Keeping one side intact, slit from the
other side.
Take all your bhindi in a
bowl. Add red chili powder, dry mango powder, cumin powder, turmeric powder, chaat
masala (1/2 teaspoon only) and salt. Mix everything very well with a spoon or
spatula and keep it aside for 15-20 minutes. Bhindi will leave little water.
Now sprinkle the besan on
the bhindi. Mix again lightly. Add water to make a medium thick batter. Stir the
whole mixture lightly with a spoon or with your hands. Now your bhindi batter
is ready to fry.
Heat oil for frying in a pan
or kadai. Deep fry the bhindi over medium heat till golden brown and crisp. Fry
the bhindi in batches to avoid overcrowding the pan. You will have to turn the
bhindi a few times so that they get fried evenly. Remove the bhindi on
absorbent paper to drain the excess oil.
Sprinkle lemon juice on top
of the bhindi kurkuri. Now sprinkle a little chaat masala over the top. Bhindi Kurkuri
is ready to serve. Serve immediately as a tea time snack or even as a side dish
with the combination of rice and dal.
