Aloo Palak Sabji is a popular dish in North India. It is a vegan Indian dish where spinach and potatoes are cooked together in light masalas. You can make this dish in a number of ways. Today I am sharing the dry version of this vegetable dish.



Aloo Palak Sabzi can be eaten with roti, parathas, chapatis, puris or even with rice. You can also pack this in your children’s lunch box. This sabzi can also be used to stuff sandwiches.

Aloo Palak Recipe | Potato with Spinach | How to make Aloo Palak Sabji?


Ingredients

Potatoes (Aloo) – 2 cup (cubed)
Chopped spinach (Palak)– 3 cups
Mustard oil – 2 tablespoon
Asafetida (Hing) – a small pinch
Cumin seeds – 1/2 teaspoon
Chopped onion – 1/4 cup
Finely chopped garlic – 1/2 teaspoon
Finely chopped green chilies – 2 or 3
Turmeric powder – 1/4 teaspoon
Red chili powder – 1/4 teaspoon
Coriander powder – 1 teaspoon
Salt to taste

Method

Heat mustard oil in a Kadai or pan on medium heat. Once the mustard oil is hot, add cumin seeds and let them crackle.

Then add hing and chopped onions. Saute onions until they are soft and translucent. Add chopped green chilies and garlic. Mix well and saute for few seconds.

Add cubed potatoes and mix well. Now add spices (coriander powder, turmeric powder, salt, and red chili powder). Mix well until all the potatoes cubes are well coated with spices.

Add 1/2 cup water and stir well. Cover the pan with a lid and cook for 6-8 minutes on low heat until potatoes are tender. 

Remove the cover and cook till the potatoes are almost done. You can add more water if required.

Next, add 3 cups of chopped spinach. Mix well. Cook on medium heat for 3-4 minutes or till all the liquid evaporates. Stir occasionally.

Your sabzi is ready. Serve hot with parathas, chapatis, roti, puris or rice.
