Ingredients

Green chili – 100 gms
Karonde (Carissa Carandas) – 50 gms
Cumin Seeds – 1/4 tsp
Asafoetida – a pinch
Oil – 1 tbsp
Salt to taste

Method

Wash karonde and green chilies and wipe dry them. Cut karonde into two and remove seeds. Remove the stem of green chilies, slit them into half and chop roughly. Heat oil in a pan. Temper asafoetida and cumin seeds. Add karonde and green chilies and saute for one minute. Add salt and saute for another one minute. Now cook covered karonde and green chilies are both tender for about 4-5 minutes on low heat. Once cooked, take it out in a serving bowl. Serve with chapatis, parathas, dal-chawal or as a side dish with a meal.


Karonda

Karonda is a rich source of iron. Karonda is naturally sour. It contains a fair amount of Vitamin C and therefore is an antiscorbutic. It is used in various traditional Indian medicines. It is very useful for cure of anemia. It is also good in bad digestion, stomach pain, and constipation.

Bhindi recipe is very simple and quick to make. Kurkuri means crisp in Hindi. Crispy Bhindi recipe is a deep-fried snack using bhindi (Ladyfingers) with gram flour (besan) and some spices. This okra fry is a simply delicious snack. It tastes best with a squeeze of lemon and a pinch of chaat masala before serving. I am sure you will try to make this recipe at your home and enjoy it.

Bhindi Kurkuri is one of the best side dishes for your lunch/dinner you can make with bhindi. You can serve it as a side dish with dal-rice, pulao, curd-rice, sambar-rice or even with plain paratha or chapatis. It can be served as an accompaniment to your evening tea/coffee. Ingredients

Bhindi (ladyfingers) – 250 grams
Gram flour (besan) – 1/2 cup
Red chili powder – 1/2 teaspoon
Dry mango powder (Amchur powder) – 1/2 teaspoon
Cumin powder – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Chaat masala – 1 teaspoon
Lemon juice – 2 teaspoons (optional)
Oil to deep fry
Salt to taste
Water as required

Method

Wash the bhindi (ladyfingers) thoroughly in water. Wipe them dry with a kitchen towel. Trim the edges. Split the bhindi vertically with a sharp knife. Keeping one side intact, slit from the other side.

Take all your bhindi in a bowl. Add red chili powder, dry mango powder, cumin powder, turmeric powder, chaat masala (1/2 teaspoon only) and salt. Mix everything very well with a spoon or spatula and keep it aside for 15-20 minutes. Bhindi will leave little water.

Now sprinkle the besan on the bhindi. Mix again lightly. Add water to make a medium thick batter. Stir the whole mixture lightly with a spoon or with your hands. Now your bhindi batter is ready to fry.

Heat oil for frying in a pan or kadai. Deep fry the bhindi over medium heat till golden brown and crisp. Fry the bhindi in batches to avoid overcrowding the pan. You will have to turn the bhindi a few times so that they get fried evenly. Remove the bhindi on absorbent paper to drain the excess oil.

Sprinkle lemon juice on top of the bhindi kurkuri. Now sprinkle a little chaat masala over the top. Bhindi Kurkuri is ready to serve. Serve immediately as a tea time snack or even as a side dish with the combination of rice and dal.

Ingredients

Carrots (Gajar) – 2 cups (cubed)
Fresh Green Peas – 1/2 cup
Oil – 2 tbsp
Cumin seeds – 1/2 tsp
Chopped onion – 1/4 cup
Chopped Garlic – 1 tsp
Turmeric powder – 1/4 tsp
Tomato puree – 3 tbsp
Red Chilli powder – 1/2 tsp
Coriander powder – 2 tsp
Mango powder – ¼ tsp
Chaat Masala powder – ¼ tsp
Green Coriander leaves for garnishing
Salt to taste

Method

Heat oil in a pan on medium heat. Add cumin seeds and let them crackle. Add chopped onions and saute until translucent. Add chopped garlic and saute for few seconds. Add tomatoes puree and saute for 4-5 minutes. 

Add green peas and cubed carrots. Mix well and saute for a few minutes. Add turmeric powder, red chili powder, coriander powder, and salt and mix well. Add 1/2 cup of water and stir well. Cover and cook for 7-8 minutes until carrots and peas are tender. Add some more water if required. 

Remove the cover. Add mango powder and mix well. Cook for 2-3 minutes. Add garam masala and mix well. Stir the sabji till all the liquid evaporates. 

Gajar Matar ki Sabji is ready. Garnish with green coriander leaves. Serve hot with plain paratha, roti or chapattis.

Gajar Methi ki Sabji has the pleasing bitterness of Methi leaves but awesome in taste. Serve hot with plain paratha, roti or chapattis. It can also go very well with dal and rice.

Ingredients

Carrots (Gajar) – 2 cups (cubed)
Chopped Fenugreek leaves – 2 cup
Oil – 2 tbsp
Cumin seeds – 1/2 tsp
Chopped onion – 1/4 cup
Chopped Garlic – 1 tsp
Turmeric powder – 1/4 tsp
Red Chilli powder – 1/2 tsp
Coriander powder – 2 tsp
Mango powder – 1/2 tsp
Salt to taste

Method

Heat oil in a kadai on medium heat. Add cumin seeds, when seeds crackle. Add onions and saute until translucent. Add chopped garlic and saute for few seconds. Add chopped fenugreek leaves and saute for a couple of minutes. Add turmeric powder, red chili powder, coriander powder, and salt and mix well. Add cubed carrots and 1/2 cup water and stir well. Cover and cook for 6-8 minutes until carrots are tender. Remove the cover. Add mango powder and mix well. Cook for 2-4 minutes till all the liquid evaporates. Gajar Methi ki Sabji is ready. Serve hot with plain paratha, chapatis, roti or any type of bread. You can also serve it with dal and rice.

Bhindi is a favorite vegetable at my home. Bhindi Masala recipe is a simple and delicious recipe that I often make in my kitchen for my children. It is a North Indian recipe made with ladies’ finger. It goes very well with chapattis and plain parathas. It can be served for lunch and dinner. You can also pack “Bhindi Masala” in your children’s lunch box.

Ingredients

Bhindi (Lady’s finger) – 500 gms
Chopped Onions – 2 (medium size)
Chopped Tomatoes – 2 (medium size)
Oil – 4 tbsp
Cumin seeds – 1/2 tsp
Red Chilli powder – 1 tsp
Coriander powder -- 2 tsp
Turmeric powder – 1/2 tsp
Mango powder – 1 tsp
Salt to taste

Method

Wash and wipe bhindi with the help of a kitchen cloth. Cut both the ends and cut into 1/2 inch pieces. Heat oil in a kadai. Add cumin seeds, let them crackle and change their colour. Add chopped onions and saute till light brown in colour. Add tomatoes and saute for 4-5 minutes. Add bhindi. Sprinkle turmeric powder, red chili powder, and coriander powder. Mix well and cook covered on low heat stirring in between. When bhindi is cooked, add mango powder and salt. Mix well and cook for 2-3 minutes on high heat. Serve it hot with chapatis or plain parathas.

Ingredients

Palak Leaves (Spinach) – 500 gms
Oil – 1/2 tbsp
Cumin seeds – 1/2 tsp
Chopped Onions – 1/2 cup
Chopped Tomatoes – 1/2 cup
Chopped Garlic – 1 tsp
Chopped Green Chilies – 2
Asafoetida – A pinch
Salt to taste

Method

Remove stalk from the palak leaves (Spinach). Wash and chop the palak leaves finely. Heat oil in a kadai. When the oil is sufficiently hot. Add cumin seeds, let them crackle. Add chopped onions and saute until translucent. Add asafetida, chopped garlic, chopped tomatoes and chopped green chilies. Saute for few seconds until light brown in colour. Add chopped palak leaves and salt. Mix well and saute for 2 minutes. Cover and cook for 3-4 minutes. Check it after 3 minutes. Now cook it for 2-3 more minutes and let the excess moisture evaporates. Put off the flame. Palak Bhujia is ready. Now transfer the Palak bhujia to a bowl. Serve hot along with chapatis, puris, parantha or rice.
